Maple Nut Oaties

 

Ingredients:
  • 1 cup toasted rolled oats.  I just toast them in the toaster oven set on 350° for a few minutes.  Watch them as they burn easily.
  • 1/2 cup nut butter
  • 1/2 cup maple syrup or agave nectar
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped nuts
  • 1/2 cup chocolate/carob chips or dried fruit (One really good combo is cashew butter with dried pineapple.  Yum!)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 to 1/2 tsp salt (omit if using salted nut butter)
Directions:
  • Pre-heat oven to 325°.
  • Combine all ingredients and refrigerate for 15 minutes.
  • Scoop cookie dough by TBSP (I actually use a melon ball scooper) onto parchment lined or greased cookie sheet.
  • Bake 10-12 minutes.
  • Let cool for a minute or so, and then I just pick them up and form into balls before placing on the cooling rack.

    Wow this recipe looks really great… just a question though, as a student on a budget, I can’t pour 1/2 cup worth of maple syrup/agave without seeing $$$ signs flowing away …. any cheaper substitutions??? 😀 Thanks!

    Hey Cecilia,
    You could always try juice concentrates like apple, pineapple, or cherry. I bet they would work nicely in the Maple Oaties recipe. I did try honey once, but the cookies turned out way too sweet. If you do use honey, only use 1/4 cup instead of 1/2. 🙂

    A word of caution: these aren’t gluten-free unless they are specifically made with gluten-free oats. Oats are contaminated with wheat through their growing cycle due to crop rotation, and also in processing. Many celiacs are also sensitive to the protein in oats as it is structurally similar to gluten. Please be careful.

    Unsweetened coconut is very hard to find in my area. If I use the sweetened coconut instead, will I have to alter the recipe at all?

    I have the ingredients in my kitchen, so have mixed everything and waiting for it to cool for 15 minutes before it goes in the oven…

    Problem is… I keep going back to the fridge to “taste” it one more time…. IT TASTES SO AWESOME!

    My son is allergic to wheat (not celiac) so this recipe fits perfectly for him. It’s sweet so I think of it mainly as a treat, but because of the other thing good for him in it, like the nuts, unsweetened coconut, oats and cinnamon- I also think of it as something nutritious to eat.

    I love your recipes and thank you for sharing them with us!

    Love the cookies…I had to substitute a few things and didn’t have the shredded coconut but I used honey instead of agave and used less and used coconut oil to even out the liquids. Will be trying lots of different combos!

    these are soo good, but when i cooked them for only 12 minutes they were still super soft. i ended up leaving them in closer to 15-20 minutes til the outside got almost golden brown, and even then they are still really mushy in the center. no complaints cause they taste FANTASTIC- but is that the right consistency?
    oh, i also used 1/4 cup mashed banana and 1/4 cup maple syrup in attempt to cut down on maple syrup (im a poor college kid and the only way i get syrup is when my parents treat me hah) and the taste was fantastic, espeically cause i used peanut butter and chocolate.

    Once again, HEABS recipes to the rescue. After some tracking (not wanting to but needing to), I’ve found my sugars are too high so pizza pancakes tomorrow for supper it is.

    Oh. My. I finally made these this morning. I tasted them warm and they were deeeelicious. I justed tasted another cooled, and I think I may swoon. These are positively the best cookies I have made in a very long time. I would say that I need to hide them from myself but it doesn’t really help if I know where that hiding place is. So, I think I will just beat myself to the punch and snarf them all down in the next, ummm, 46 minutes :O

    lo, I added it up once for another blogger. If I remember correctly, it was over 200 calories per cookie if you make 12 cookies per batch. They are definitely NOT low cal, but so yummy. 🙂

    I was thinking of making these cuties to send along to her for a special treat…included in my care package. Would they last in the mail a few days or go bad quickly? I don’t want her to open rotten agave (no maple on hand) nut oaties 😉

    I had a ton of pomegranate and made these oaties into POM, Chocolate & Nut oaties. I used 1/4 tahini to replace half of the nut butter. They turned out really well and I included them in my goodie bags for my party guests.

    Yes PLEASE share! I have celiac and our whole family is gluten free so we order our oats from Bobs red mill by the pallet BUT I finally realized the oats give me horrible reflux. I was wondering if this would work with the quinoa flakes but figured they are too thin and might fall apart. I may try it too.

    Angela, I’m not sure how Marissa’s turned out, but someone else made them with quinoa flakes and said they turned out great. I also just made some with 1/2 oats, 1/2 quinoa flour, and they were a hit. So, perhaps all quinoa flour would work? Not sure, but definitely worth a try! 🙂
