Lazy Girl Meatloaf

 

Ingredients:

  • 1 lb grass-fed finished beef
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 eggs
  • 1/2 cup tomato paste
  • 1 TBSP Italian seasonings
  • 1 tsp salt

Directions:

  • Pre-heat oven to 350°.
  • In a large bowl, combine all ingredients.
  • Transfer combined ingredients to a greased loaf pan or 9 x 13 baking dish.
  • Bake for 60 minutes.
  • Allow to cool for 10 minutes before eating.

      I made this Friday night and it was AWESOME! I added some shredded cheese, a diced green pepper and shredded squash (had to get rid of some things in the fridge). It’s so nice to find a recipe without oats or breadcrumbs!

      Susannah, I know – I have no idea why so many meatloaf recipes call for breadcrumbs! So unnecessary. Happy to hear you enjoyed the recipe – it’s one of CD favs. 🙂

      Hi again!

      I was wondering if you’ve ever tried doubling or tripling this recipe. Does the cook time stay the same? Also, what does CD mean? 🙂 I’m a noob.

      Hey Candice, No, I have never tried doubling it, but I would think if you just bake it in a bigger casserole dish, the baking time would probably stay the same. However, if you bake several dishes at a time, you may need to increase the time by 10 minutes or so.
