Kermit Muffins

Inspired by Chocolate Covered Katie’s High Protein Cake

Yields: 6 muffins

Ingredients:

96 grams of vanilla protein powder

1/2 cup applesauce

1 egg

1/2 mashed avocado

1/4 cup water

1/2 tsp baking powder

1/2 tsp vanilla

pinch of salt

pinch of cinnamon

sweetener to taste*

*I use Jay Robb’s rice protein powder, and it’s sweet enough on its own. So I skip any added sweetener.

Directions:

Pre-heat oven to 350°. Combine protein powder, baking powder, salt, and cinnamon. In a separate bowl, whisk egg and then add to dry ingredients. Stir in remaining ingredients and pour into a greased muffin tin. Bake for 30 minutes. Allow to cool and store in fridge. For a chocolate version, click here.

    These look awesome! (Well actually, they don’t really look awesome, they just sound awesome. l0l) I am excited to try them. I have been craving some kind of peanut butter muffin – I wonder if adding peanut butter would work! Thanks for the recipe.

    I just wanted to share that I did try these in a loaf pan with peanut butter – about a 1/2 C. + 1 Tbsp instead of the avocado which I didn’t have on hand, and it was yummy!! It needs more peanut butter to have more pb taste, so I need to play with that. Also wanted to say that your pictures are great, and the muffins do look yummy to me – I was just joking about the green. 😀

    Natalie, I would sub 2 TBSP peanut butter for the avocado. You’ll lose the green, but I bet they would be delicious!

    Natalie, Oops, just saw your second comment – that much PB, huh? Good to know, and so glad you enjoyed the muffins…green or not. 😉 If you used sunflower seed butter, they would turn green when you bake them. Can’t remember why, but for some reason sunflower seed butter cookies always come out green. So glad you tried the recipe. Enjoy the rest of your Sunday!
