CD’s Birthday

Chris turned 30 yesterday, and it was such a fun day! Once again, we had gorgeous weather, and CD and I spent the afternoon at our second baseball game of the weekend. Andy, CD’s brother, is the play by play sports announcer for the University of South Carolina, and he was here all weekend to call the South Carolina vs. Vandy baseball games. After South Carolina won yesterday, we got to hang out in the press box.

It was only 4 PM when we left the stadium, but since it was so nice outside and we were hungry, we ended up walking a few blocks to one of our favorite restaurants for an early dinner.

When we got to Bricktops, I quickly decided on the steak salad. The smell wafting from our next door neighbor’s grill has had my mouth watering lately for some good beef, and this salad totally hit the spot!

We came home, and I made Chris leave the kitchen while I prepared his birthday cake. On Saturday afternoon, I had whipped up a secret batch of Maple Nut Oaties while Chris was gone. However, I didn’t bake them. Chris loves love loves the Oatie cookie batter and always begs for any leftover dough. So, instead of baking the cookies, I simply flattened the dough into 5 Oatie cakes and stuck them in the freezer.

For the cake, I topped 1 Oatie with mini-scoops of Purely Decadent’s chocolate and vanilla coconut milk ice-creams and some TruWhip. The chocolate coconut milk ice-cream is so good, and I kept eating extra spoonfuls during the assembly process. Hehe. 🙂

The cake was a hit! Happy Birthday CD! I had a blast celebrating with you. 🙂

    Those look delicious! What kind of nuts did you use? Have you ever tried soaked oats with this recipe? I’ve been looking for a gluten free dessert to serve at my daughters b-day (she’s only 7 mos now). Not a lot of options out there =(. These look like they might work for the occasion! I can’t wait to make them! Thanks for sharing the recipe!

    You are as lucky to have a hubby that would adore that sort of birthday cake as CD is to have a wifey who will whip it up for him! You’re a match made in Heaven! 😉

    The ice cream makes the cake in this case! Love watching sports games.
    And I totally know what you mean about the smell…whenever summer weather comes around I can smell people BBQ’ing their backyards…oh my God…it’s amazing I haven’t jumped anyone’s fence yet and crashed their dinner ;)…yet being the operative word, cause it’s gonna happen I’m sure…

    The BBQ smells were killing me all weekend. That is, until I went out and refilled my propane tank for my grill. Summer = BBQ time in my book! And baseball!

    haha don’t tell my hubby that you spent the day at a baseball game/ nice dinner! mine slaved in the garden on his bday yesterday BUT i did take him out on sat night for a dinner at one of our fave “nice” eateries for an early celebration 🙂

    Tiffany, I used roasted almonds and gluten free oats in the recipe. Never used soaked oats before. I like to toast the oats before making the cookies – it seems to bring out more flavor. Hope your daughter enjoys them in the future! 🙂

    We went to Bricktops when we were in town a few weeks ago for Andrew’s bday! So good! Guess what, friend….we’re moving back to Nashville!     What a fun way to celebrate! Chris and his bro look SO much alike. And your “cake” is just perfect (I much prefer unique “cakes” (like froyo or chips and salsa) to traditional cake.

    That sounds like the perfect birthday “cake!” I agree on the chocolate coconut milk ice cream- it’s probably my favorite frozen treat. It reminds me of marshmallows for some reason 😀

    Ha ha, love the “cake!” You guys are so down to earth, easy going. Something to strive for.

    I’d forgotten you mentioned that about CD’s brother. Right now my oldest niece is trying to choose between USC and Fla State for school. (she was accepted early to both, lives in Conway SC so in state tuition is a nice thing 😉

    You were in Columbia? Oh man, that’s crazy. I’ve got a good friend up there, and more importantly, I only live about two hours away from Columbia. You were just two hours away from me! (I know this isn’t exciting to you, but I just think that’s so neat. HEAB was in my state! he he)

    Deb, Ha ha – CD totally got carded at dinner that night when he ordered a beer, and nope, same old Oatie recipe although I did use oats that contained dried cherries in them. They did add a little bit more color. 🙂
