Cookies for Breakfast

January 10, 2010

I am sore from yesterday’s weights. I love being a sore after a good workout – means I worked those muscles! I celebrated with breakfast, and GUESS WHAT????? I made pancakes WITHOUT protein powder. No, really, I did. πŸ™‚

My inspiration? Katie’s Oatmeal Cookie Crepe Cakes!


40 grams blanched almond flour

40 grams rolled oats

1/2 cup unsweetened almond milk

1/2 tsp vanilla

1/8 tsp almond extract

1/4 tsp baking power

1 packet stevia

Pinch of Celtic sea salt

Lots of cinnamon

My batter…


My batter after pimping with 3 egg whites whipped with 1/4 tsp cream of tartar…


Onto the griddle…




Pile onto plate and cover in more cinnamon…


Make vanilla cinnamon protein ice-cream for dippin…


Make ice-cream cookie tacos and eat…


Then drink a big mug of coffee to warm your heart and full belly since it’s 14Β° outside. πŸ™‚

Love you Katie. These were sooo good. The rolled oats added a lovely “chew” factor, and I encourage all of you to try them soon!

    You are so naughty! Cookies and ice cream for breakfast! I love it when you can eat “bad” foods for breakfast and make them healthy!

    Hey Heather! Your breakfast looks great! I tried protein ice cream a few nights ago, but I think I might have added too much ice because it felt like I was just eating ground ice. Next time I’ll try it with less ice. Yesterday I ordered Jay Robb rice protein powder for the first time. I can’t wait to try some protein pancakes, oats, and smoothies!

    Rachel, I can find Celtic sea salt at Kroger, local chain of grocery stores, but Whole Foods or any health food store will carry it as well. I buy the unrefined stuff – it’s gray and full of minerals.

    Sally, I’ve been there with the bowl of icy ice-cream. No fun, but I learned from my mistakes, and now can eyeball the perfect amount of ice. Hope you like your Jay!!!

    Those cookies look so good!! I think I’m going to have to buy some almond flour and make them this weekend. I’m pretty sure they will go over well with the fam! I too love the ‘sore’ feeling after a good work out… I’m on my way to do one right now. This winter weather is putting me in a work out slum and I’ve actually gained a few pounds, but eat better, move more and no worries – right!?

    Heabs I think I read once that you dont like using the microwave – why is that?

    Also – yes the pancakes look terrific. Its always a good sign when they are as tall as they are wide!

    A griddles make pancake makin so much easier huh? I can only get about 3 cooked at a time with my skillet. I’ve gotta invest in one soon, I love pancakes!

    Do you do dairy? If so, I think his whey is the best tasting out there, and you can’t beat his ingredient list. Rice is good too. Took a while for me to get used to, but now I love it. Not a fan of the egg white protein powder though…it’s a bit funky.

    Brittac, I believe the micro-rays are melting my insides, causing my cells to mutate into God only knows what. OK, so nothing that extreme, but it kind of freaks me out that microwaves change the molecular structure of our food. I don’t like it. Would rather just use the stove-top or toaster oven to cook or re-heat.

    No protein powder IN the pancakes but definitely on top! wwoot. So glad you’re feeling better Heather. Bought my *last* (before I leave at least) kabocha today. πŸ˜₯ Made me kinda sad. But there will be another time of my life where kabocha puree will make many appearances. Just gotta get used to it I guess! (And read the manual to the CIA, pretty much NO electric cookwear whatsoever besides a microwave, but I’m sneaking the magic bullet in with me!)

    Hi Heather, I hope you’re feeling better. You keep rockin out the great eats! Ok so these are gluten free, soy free, and almost vegan. No dairy but the eggs. Do you think that I could skip the egg whites (eggs) entirely? I dont like egg replacer as it leaves a funky taste to me which is why I never make pancakes. But these are sooooo close to perfect for me….egg whites, to skip or not to skip? I fear that if I omit them, these would be hard little flat cardboards…what do you think after seeing your raw batter?

    Do you ever make ahead and freeze extra servings or just go solo by day πŸ™‚ You read sooo much nowadays about “planning ahead” and prepping …and I hate to spend time doing that though :). Glad your cold has relented!

    Eatmovelove, I never do much food prepping as I never know what I’ll feel like eating on any given day. I’m more of a fly by the seat of my pants kind of gal. Planning is no fun. πŸ™‚

    Yumlicious Heaby!! These sound awesome!! They look so cute too πŸ™‚ One question- why’d you sub the almond flour for the whole wheat flour? I remember on your new years post you said you were going to stop avoiding foods that you can tolerate, to be less restrictive on yourself, so I am holdin ya to that and asking if you avoided the gluten grain for any specific reason?! Anyway- Do you think it changed the texture much? I want to try making these for my special man ❀ ❀ u!

    Lola, Honestly, I love the taste of the almond flour. Never been a big fan of whole wheat in pancakes & baked goods. So dense and “wheaty” tasting, ya know? The almond and coconut flours I’ve been using are much lighter tasting. Much betta. πŸ™‚

    I am going to copy and paste this recipe. Soon, I will have to try one of these!
    I guess I’ll have to grow more confidence in this area because I am not much of a cook to begin with and I never tried any of those ingredients yet.

    Sounds like you had a nice day. I think the basic pancake recipe with box mix + oats + water are the best, old-fashioned nice way. Of course you Heabify it with all these ingredients that I haven’t heard of , or can’t keep up with πŸ™‚ Whatever works for YOU girl.
    Cookies at breakfast sounds good.

    Hope that cough is still on it’s way out.

    These pancakes look great. Similar to Polly’s “oaty cakes”?

    I have found that if I take 1,000 mg of Vitamin C about an hour before a workout, my muscles are less sore. Just a suggestion you might try.
