Since I made Mole Chocolate Pancakes on Saturday, I decided to skip the pancakes on Sunday for something a bit more savory. I knew I wanted eggs. So, I threw some leftover chopped veggies in a skillet with some shrimp and spices. I then added my eggs and decided on an omelet.

Mmm, an omelet topped with chipotle almond butter. That would be perfect…but then, I had a revelation of sorts. Instead of an omelet, I made a veggie shrimp scramble, and after a quick game of musical jars, behold the best savory breakfast ever….

Scrambled eggs with veggies and shrimp in the chipotle almond butter jar!!! This was quite delicious, and I decided that I needed to share the chipotle love with my HEABers. Thankfully, reader Carolyn was kind enough to send me her secret recipe so that I can now make my own chipotle almond butter. Who wants some?     Yummmmm! I love eggs, and chipotle, and nut butters, and veggies! But, I don’t have a Sam’s Club membership and sadly, can’t get the chipotle almonds to make the chipotle almond butter. Here’s hoping that I win so that you make it for me and I end up so addicted that my DH and I end up having to get a membership to feed our cravings! *smile*

    Sounds tantalizing to me! The combination of the shrimp and chipotle butter reminds me of one of those combinations that I think would be *so amazing* while my family and friends look on with disgust while I consume it.

    heather, i would LOVE to try some of your chipotle almond butter. a few days ago i made my own HEAB-inspired breakfast. i put some hot milk in some left over granola cereal, added raisins and cinnamon, and even a little dollop of dark chocolate peanut butter. it was good energy for a snowy morning here in wyoming.

    i’m currently collecting almonds out of some of my mixed nut jars to attempt my own almond butter soon. wish me luck!

    I eat an easy over egg on ezekial toast w/ veggies almost daily for lunch, and have given up ketchup for a few months now, I play with a new pesto creation every week as my egg-condiment, but I think chipotle almondbutter would be the bomb diggity!

    Okay, that breakfast out does all your breakfast creations so far! It does look good- minus the shrimp ;). I LOVE eggs with veggies for breakfast. I always put cumin, chili powder etc. in mine. I would love to try some homemade chipotle almond butter. I don’t eat almond butter that often, but when I do, it sure is a treat šŸ˜€

    A few weeks ago I made a huge veggie omelet for dinner with sriracha and avocado and my husband said it was one of the best dinners we’ve had and wanted it again and again (I was thankful for the compliment, but also thinking “Really? One of the best? Hmm..”). The idea of adding shrimp is so good and then topping with chipotle almond butter instead of sriracha sounds amazing! Thanks Heather!
