Veggiful Lunch

Look, I had egg and fries for lunch.

I love Gena’s carrot fries. I follow her exact recipe but cook mine in a 425Β° oven for 40 minutes on a wire rack (picture below). They come out more crispy that way.

Once they were done, I sprinkled my fries with a little maca powder. I also sauteed some broccoli slaw and summer squash in a dab of coconut oil and seasoned it with salt, pepper, and red pepper flakes. When my veggies were just about done, I added some egg whites to the pan and scrambled the whole mess together. I topped it off with a little sprinkle of Sun Warrior vanilla rice protein. Sounds weird, but reader Dawn gave me this yummy idea. Thanks Dawn – I love it!

The maca powder is a new thing for me. Deb sent me some of Life-Flo’s Maca Gold, and I was excited to try it, hence all the maca lovin thus far today. Thanks again Deb!

I’ve gotten a lot done today around the house, fit in a 45 minute YogaDownload class, and I got some meatballs in the crock-pot for CD’s dinner. Now have 30 minutes to take the dogs on a short walk and shower before heading into work. Bye. πŸ™‚

    I have put maca on my “to research” list. Your posts are reminding me to get on that! I read that it helped with hormones…why I am interested…

    A yoga question: I have been trying out some classes from yoga download. So far I like what I have tried. I am looking for a really good, hard, fast class – 60-90 minutes. I like to keep it moving. As a well versed yoga download lady – do you have any recommendations? Much appreciated!

    i’ve read before that maca is not recommended for those taking estrogen (i.e. birth control) because it increases your fertility and the effects of that on women who take birth control are unknown. any thoughts? i’d really like to try maca powder, but this kind of scared me a little.

    Carrot fries = my BFF lately.

    Pro powder on stir-fry does sound a little weird, but if you’re saying it’s tasty, I’m inclined to trust you. I can always count on you to try out the funny combos! I’m all for it…as long as you’re my filter, hehe…

    Today i put pumpkin, cranberries, a sprinkling of protein powder, and a bit of chestnut paste in my egg whites. Melt a little EVCO on it and nirvana!

    Carrot fries!!! I am obsessed with carrot sticks. Eat them with one meal every single day. I have to try slicing them up thinner and popping them in the oven. I’m picturing sweet potato fries, but with an even better carrot-y goodness πŸ™‚

    And any eggy scrambled mess gets a thumbs up from me!

    Hi Heather,
    I am trying to change my diet, mostly to loose weight because I am pretty healthy eater. I am also curious about how you cook some of your food. I will look on some of your recipes for that. More specifically I have always wondered how you cook your roasted vegetables and which ones you usually cook. I usually saute mine in olive oil but was curious about another way since you mention them quite often.
    Great food tips. I actually got onto the computer this afternoon and thought to myself, “I wonder what a day of Heather’s food is?” and then your post was exactly that! I am meant to read your blog in this food journey of mine.

    Hey Kimmy, Our fridge is always stocked with veggies (we buy in bulk at Costco), and I usually stir-fry or roast bell peppers, onions, mushrooms, broccoli, and Brussels Sprouts. My oil of choice is coconut oil – usually about 1 TBSP. To stir-fry, I cook the onions a bit first in my melted coconut oil and then add the mushrooms. Allow them to cook a bit to release some of the moisture. Add remaining veggies, salt/pepper, and the water from the mushrooms will cook/steam everything. Keep stirring until done (10 minutes or so). For roasting, I grease a a baking dish with coconut oil, dump in my veggies, add a few tsp of coconut oil and salt/pepper. Roast in a 425 degree oven 40 to 50 minutes, stirring once or twice. Perfect. πŸ™‚

    Lauren, I’m not currently taking estrogen, and I’m taking the maca to help with my hormone imbalances. According to the brand I’m taking ( http://www.vitacost.com/Life-Flo-Maca-Gold-trade#IngredientFacts), maca powder provides energy and increases fertility in women. I would talk to a good naturopath before you decide anything.

    Oh my! More maca! So glad you’re getting use out of it. Hope it helps with the imbalances!! Do you like the taste? I used to put it in smoothies and Protein girl allie, at pimp my protein shake says that it tastes good unless it’s allowed to sit and ferment (which is what I let it do, so gag on the flavah for me). FYI. πŸ™‚

    I’ve never tried carrot fries! I thought of you this evening:) I had eggs over my salad with a big dollop of hummus! YUMMY:)

    I may ask my ND about Maca to see if it would help with my hormone issues. And, I could definitely use more energy! Hope it helps you. Have you ever tried natural progesterone? I have been using it for several years and CAN’T go without it. You have probably gotten TONS of suggestions from people–just thought I would mention it:)

    one more eggy comment: don’t mix them up!! simply pour then into the pan, add other stuff, and WAIT about 4-5 min til they solidify=an omelet to dream of.
