New Nut Butter Experiment

Look, I used my homemade nut butter method to make raw Brazil Nut Butter:

It turned out soooo thin, but it was really yummy drizzled on Gena’s Lime-In-The-Coconut Smoothie:

My Smoothie in A Bowl contained the following:

  • 1 cup unsweetened vanilla almond milk
  • 1/2 frozen avocado
  • 1/2 frozen banana
  • 1 peeled lime
  • 1/2 packet stevia
  • 1/4 tsp xanthan gum
  • 1/2 tsp guar gum (The gums really fluff up the mix.  Love them!!  Thanks again to reader Deb for sending them to me).
  • Handful of ice

Normally, I don’t keep my nut butters in the fridge as I like them a bit runny, but the Brazil Nut butter needed a little cold love.  After a couple of days in the fridge, it solidified into the most perfect spread for…


Tropical Pancakes

In keeping with a South American theme, I topped my protein pancakes with a spoonful of Artisana’s raw coconut butter, 1 spoonful of Brazil Nut Butter, 1/2 a fried plantain, and 1 tsp of maple syrup. Katie, how’s that for some pancakes?!?

    OH… I have to give the coconut smoothie a go! sounds perfect today

    I am eating almond butter with my SALADS now….I’m a CONVERT Heather!

    my oatgurt vs.2 bombed again. texture was right but too tangy and I think I over stirred it. it was getting that CRUST but then fell flat. I am keeping at it tho!

    and I finally found that coconut BUTTER…. I put a dab of it on my grilled yams! it’s HEAVEN!!!!

    brazil nuts are delicious- I think I’d gobble down that nut butter way too quick 🙂 I love your hair- looks gorgeous!! I wish I could wear some pink in my hair…my work would not be ok with that (lame)! Maybe you’ve noted this before, but where do you buy your bulk nuts?

    What a great idea to make brazil nut butter… I wonder why it went so thin and runny… maybe there’s just too much oil in those babies.
    The pancake looks amazing. I could have me one right now! And it’s very south american to put avocado in smoothies, you were really sticking to this theme! Bravo!!

    I saw this recipe and thought of you!

    Amaranth Sauté in Kabocha Squash
    Serves 8

    The porridge-like Amaranth mixture is seasoned with tamari and green onions, then spooned into a steamed whole kabocha squash. When the squash is cut lengthwise into half moons – and appropriate shape for this festive, autumnal side dish – the amaranth oozes over the sides. The dish can also be eaten the next day with a soup or a bread.

    1 ( 2 pound ) Kabocha Squash
    1 cup amaranth seeds
    3 cups water
    6 green onions (white and green parts), thinly sliced diagonally
    2 tablespoons tamari
    Using a sharp knife, carve out a circular opening in the top of the squash. Reserve the top. Scoop out the seeds and fibers and replace the top. Pour enough water into a large
    pot to come 1 inch up the sides. Place the squash in the pot, cover the pot, and bring to a boil over high heat. Decrease the heat to medium-low and steam the squash for 30
    minutes, or until it is tender but still holds its shape.
    Meanwhile, rinse the amaranth in a fine mesh strainer under cold running water and drain well. Heat a heavy skillet over medium heat, add the amaranth, and stir constantly for
    5 minutes, or until the amaranth is toasted and fragrant. Transfer the toasted amaranth to a bowl. Bring the 3 cups of water to a boil in a heavy saucepan over high heat, then
    add the amaranth. Decrease heat to low and simmer, stirring often, for 30 minutes, or until the amaranth is tender and thickens like porridge. Stir in the green onions and the
    Remove the top from the squash and spoon in the amaranth mixture. Cut the squash lengthwise into wedges and serve.

    I’m on a 3 week goatee now, first facial hair ever.. cant keep my hands off the face..
    But i figured since you are cutting yours off, i would have to grow some- just so the fung shui would stay equalized in here ;-p

    Aww, I agree with Gena! You really are glowing!!! I love the hair!! I’m still waiting to get my hair cut….though the split end-age is kinda freaking me out.

    And WOW. Smoothie, pancakes. Everything looks insanely good. INSANELY good. Was the lime smoothie really tart though? Hmmm. I’m not a huge fan of tart things. But plantains on a protein pancake!! Whattttt. That’s just not right. That sounds way too delicious.

    I love brazil nuts! They are always the last ones picked in the nut mix in our house….people just don’t seem to like them, but they are my favorites! I need a better blender….my last homemade nut butter experiments were flops. Bummer, because I’d be all over the brazil nutter butter 🙂 Loving the hair….you are a hottie 🙂

    Question: I recently purchased some xanthum gum and I saw that you used it in your brazil nut butter and smoothie concoction and I was wondering what else you use it in (and do you always use it with guar gum). Last time I used xanthum gum in a smoothie I wasn’t crazy about the texture but maybe I added too much or needed the guar gum to go with it?! Your advice an input on xanthum gum would really help me out!

    OH, and the pink hair looks awesome!

    Neat! I’ve always wanted to make a homemade nut butter that included several different kinds of nuts, but I’m afraid it will come out tasting muddled. I like the idea of Brazil nuts. You know what else I like? Your hair! Supermodel-esque! I love it.

    Heather, you are GORGEOUS! Not many people can pull off pink hair and still look classy. You definitely do!

    Oh yowza – that looks so good!

    I finally made a real batch of homemade almond butter. It didn’t do so well in the vitamix, but when I put it in the small food processor container (the one that goes in the big one) it worked. I may have to leave it out on the counter. Its just ok cold, but I just read in this post (how timely) that you don’t refridgerate yours. I’m going to have to try that! Thanks for all the yummy inspiration!

    I don’t think Ive spotted brazil nuts here but I have had them and love them. Might try this with another nut. The lime in the coconut smoothie is top of my list now. YUM! I could subsist on lime derived eats methinks.

    Just out of curiosity, how much is maranatha almond butter there? At our little organic stop (the only place I can get MOST my healthier stuff that isn’t raw produce) charges $12.99 for the small jar and $21 for the large. *gulp* I can get one bag of groceries and pay anywhere from $75-$100 depending on whats in there!

    Ohh this looks super yum! I wish i could eat brazil nuts coz they taste soo good… but for some reason i get really short of breath after i eat them ( must be allergic ) its such an uncomfortable feeling.

    Ohhh, I bet brazil nuts are really tasty as butter! I like mine runny too, but not too runny. I actually move them between the pantry and fridge depending on what type and how the consistency is getting. I’m very specific about it! My dad can never keep up with where the almond butter is 🙂
    And yes, I should live near you and we could eat green fluff all the time! I often wonder why I have teeth.
    Also, I love your hair. I miss the way long hair looks, but love the easiness of my short hair. Hooray for fun pink!

    The Brazil Nut butter is a neat idea. I really like the almost oaky flavor of them. The pink hair is great! It’s not too over the top…just a touch of fun for summer…I love it!

    You’re so pretty! I love the pink 🙂
    I just started digging around Gena’s blog yesterday and definitely need to try her recipes, they look amazing!

    I’ve been curious about those gums actually, would it be worth buying some? I love using chia in my oats and smoothies but I think I’ve seen the gums in the whole foods bins too. Maybe next time I”ll pick some up to try.

    I also tried oatgurt a few days ago! I made it with wheatberries because that’s what I had on hand. I think it turned out ok, at first it was kind of inedible though, really sour even though I only let it sit for a little less than a full day, then I ended up adding stevia and almond milk and cooking it and it was really good! So much for it being raw though :\ If you have any tips I really want to try it again.

    And I have just one final tidbit to share with you (I haven’t mesaged you in a while!) I am just now trying these adzuki bean flakes I picked up in france and they are awesome! Sort of different, I was expecting them to cook into something more like oats but they rehydrate and end up with that more beany texture, but they’re still really good. I made mine like oats with sweet potato, raisins, pecans, maple syrup and almond milk, topped off with some granola. Hehe, I guess you can also tell I haven’t gotten away from my enormous nighttime snacking. My first step will be switching up my numerous bowls of oat concoctions for kabocha!

    Hunh. I wonder what it is about Brazil nuts that made it so runny. Maybe they just have more moisture than other nuts. Anyway, I have some B-nuts chillin in my pantry that will be put to good use tomorrow:)

    I really admire your adventurousness in taking on new nut butters. (That sounds really dorky, doesn’t it?!) But seriously, I am. Mainly because some, like walnuts and pecans, have a very sharp tinge to their flavor. I wonder how that would come across in a butter. 🙂 What did the Brazil nut butter taste like? This makes me want to try to make macadamia. Hmmm… I’ll race ya! 🙂 Unless of course, you already made it & I missed the blog. 🙂
