Heather Does Dinner & A Little Love From Texas

Yes, I do eat dinner.  A few people, one in particular, often ask me what I eat at night.  So, here you go:

I’d been wanting to make something similar to VeggieGirl’s (Happy Birthday VG!!!) B-S-Cubed Dish, and after seeing Gliding Calm’s PB2 covered veggies, I decided the time had come…I would finally use my last few precious ounces of PB2, aka peanut butter dust.  Ever since banning myself from online nut butter orders, I had literally been hoarding what remained in my last jar. So, I knew I wanted veggies with PB2, but I needed some protein as well.  Enter the brilliant Peanut Butter Boy and his recipe for Peanut Roasted Chickpeas.  I served the chickpeas over roasted kale with baked sweet potato wedges, and PB2.  Chris always wants meat with dinner, and so I threw a couple slices of bacon on his plate. We were both very happy. 🙂

After enjoying dinner so much, I took another cue from Peanut Butter Boy for my breakfast.  Using my leftover roasted chickpeas, I made a quick trail mix with raw walnuts and raisins and used it as a topping for this morning’s oat bran.

Thanks Peanut Butter Boy.  It’s about time I made one of your recipes – so good!  My breakfast held me over until I got home for lunch at 2 PM!  7 whole hours – love oat bran!

As soon as I arrived home, Leroy The Mailman was knocking at my door with this box of goodies:

Words cannot express the happiness in my soul when I opened this package from Chocolate Covered Katie!  After expressing extreme jealousy over Katie’s Artisana collection, she was kind enough to offer so send me some.  When she asked if there was anything else I wanted to try that I could not find in Nashville, I immediately demanded asked her if she could also send me some PB & Co. Mighty Maple.  Katie, thank you so much for everything, and I love the Kroger coupon book as it includes some of my favorite products!

I of course had to sample the goods right away.  So, after slamming down a little Humbecue Salmon Salad, I cooked 1 serving of hot buckwheat cereal and served it with Oikos Greek yogurt, 1 spoonful each of Mighty Maple and Cocoa Bliss, and cinnamon.  Wow – both products are definitely hide from husband worthy.  Sorry CD, but I’ve seen the damage you can do to a jar of PB! 🙂

So, I’ve been going to the yoga studio almost everyday since my workshop ended, and I continue to love yoga more and more.  However, I think there was one too many spinal twists last week as my back has been bothering me.  I took the weekend off and went to a power yoga class this morning. Coming out of Triangle Post hurt!  I may take the rest of the week off and cross-train.  We’ll see.

    Love your Tri-Blogga meal! Gotta love VeggieGirl and Gliding Calm! And I’ve been meaning to try a Peanut Butter Boy recipe for a long time, too. I think next time I make my own nut butter, I’ll have to visit his site for ideas 🙂

    Katie is such a sweetheart! I saw some of the Artisana PB at my Whole Foods last week – it may be my next nut butter purchase! And I have yet to see Mighty Maple anywhere. I wish they would bring a PB&Co. location to Chicago!

    Hurray for humbecue salmon salad – thanks for the shout out, as always 🙂 And I love the group picture! I remember your as tall as me or perhaps even slightly taller, so Justine must be model height! Although, you both could be models, IMHO 😉

    I love how you just slap some bacon on your dinner and tell CD, “Now there’s your meat!” I think that only works with BACON.

    So what flavors of PB&Co. have you tried and which are your favorite? 😉

    I love your Humbecue Salad about as much as this Mighty Maple. Seriously, I eat it several times a week! So, thanks so much for the inspiration. If I ever see Mighty Maple in the store, expect some on your doorstep. Oh, and we’ll be in Scottsdale the 2nd week of May. Sounds like I’ll miss you. 😦

    AMAZing dinner. I was so intrigued by Em’s PB2 covered veggies. And now those Peanut Butter Boy chickpeas… I sense a new dinner coming up very soon! Mmmmm. PB2 was my first ever online order of any type of nut butter… but I can see it becoming a convenient addiction veeerrry easily. In this case it’s probably a good thing I’m frugal (alright cheap but frugal sounds more friendly) so I don’t like “splurging” on those darn shipping costs haha.

    What an awesome pack of loot from the lovely Katie! I managed to find that Cacao Bliss at one store around here but WHOA pricey! I’m definitely going in for the splurge one of these days though, I just have to clear out some of the other nut butters kicking around here first 😉

    I don’t see myself as much of a yoga person but you’re seriously making me want to do it more and more every time I read your posts. I just have that stereotypical view of yoga as slow and unchallenging and all meditation. Don’t worry, I know it’s NOTHING like that at ALL but I still need to get out and try it myself to break that mental image. I’m just too much of a chicken to go do it myself, I need to try to convince someone that I can drag along with me first. I really want to try it out hot style, there’s a Bikram studio around here that I’ve been wanting to go to for months! I need yoga loving buddies!

    Hehehe I love that you call it “hide from husband worthy”. When I’m home, I often have to hide tasty food items from other members of my family because I know it will be gone in 2 days if I don’t!

    I’m totally jealous of the PB2. I can’t find it anywhere! Myabe I’ll have to look for it when I go to LA for my brithday pilgrimage to Whole Foods in May. I’ve already started a list! It helps with the grocery-shopping withdrawls. 😛

    I have in fact, occasionally, hidden food from the fam. There’s no way I can share my beloved cashew butter with the cbutter monster (aka my father)!

    I would totally be your yoga loving buddy if we lived in the same city! Try Bikram or Power Yoga in a heated studio if you’re looking for a good sweat-fest challenge. I’m still battling my inward cardio junkie, and I think the fact that I sweat my booty off at every class really satisfies my need for that cardio burn. I’m hoping to get over this – I’ll get there someday, but for now I still like to feel that I got in a good workout for the day…and yoga IS a workout!

    P.S. – Definitely splurge on the Cocoa Bliss. 🙂

    Hi Heather 🙂 It’s nice to see what you eat for dinner, too. I guess I get so distracted by your delicious breakfasts that I didn’t realize that I haven’t seen many dinners on here! The chickpeas are a great idea.
    Matt and I often have the meat differences, too, although I’m not a vegetarian I am trying to become a flexitarian! Haha, how’s that for non-committal?! Are you a vegetarian? From your posts I assume you are 🙂

    heather-your cereal creations are amazing! ice cream with oats sounds yuummy-lately my mom has been making me ice cream sundaes (Yes, i let HER do it!) and they are to tasty, i love it!!! i suggest heating up marshmallow in the microwave and spooning it onto the ice cream. it hardens immediately and creates a crusty crunchy topping. Divine!!

    That Might Maple seriously sounds straight out of the jar worthy. Since adding PB to my oats in the morning, I crave it (and AB) ALL the time! Man, 2 p.m.? Nice!! I’m so glad I joined the world of filling breakfasts again. I am a happy girl from 9-1 p.m. 🙂

    Yay! It’s great to see someone else who loves nut butters as much as I do. I would hide the jars hehe. I’m just lucky no-one in my house likes nut butters apart from me (yes, they are all freaks hehe)

    I’ve been reading your blog for a while and all your meals look SO delicious, although I’m not quite brave enough to try spinach in oat bran just yet ; )

    Your approach to eating is so refreshing and balanced, and your dinner is so droolworthy it’s not even funny. Love the blog!

    Mighty Maple – so freaking good! Your marshmallow idea sounds just like Magic Shell – used to love that stuff! You can do the same thing with coconut oil because it hardens when it cools. Mixed it with melted chocolate chips, and pour in on your ice cream and wait a minute or 2…”healthy” Magic Shell! 🙂

    No, I’m not a vegetarian…doing the flexitarian thing too. I eat fish several times a week, and I love the occasional bison burger. I also eat chicken when we go out, but we never buy it. I fix burgers for Chris almost every night – he’s obsessed with those and sweet potato fries. So, I usually load up on fries and leave the burgers to him. 🙂

    Wow, that dinner looks delicious. I just recently discovered your blog and I am really enjoying the focus on nut butters 🙂 I think that nut butter is my favorite food and could easily eat it 3 x day, 7 days a week!
