Muffins, Gifts, & Nut Butters Galore

Christmas morning I awoke with an urge to bake.  There was so much food  leftover from the Christmas Eve festivities, but I had some extra ripe bananas begging to be used.  I combined several recipes from the Internet to make these…

Banana Peanut Butter Muffins

Banana Peanut Butter Muffins

Y’all, these were seriously the best muffins I have ever made – the perfect blend of flavors.


3 bananas

¼ cup Naturally Nutty Butter Toffee Peanut Butter

½ Turbinado sugar

1 egg white

1 tsp vanilla

1 ½ cups oat flour (I pulsed 2 cups old fashioned oats in my food processor)

1 tsp baking powder

½ tsp baking soda

½ cup chocolate chips

½ cup chopped pecans

Cream first 5 ingredients until creamy.  Stir together oat flour, baking powder, & baking soda.  Slowly add dry ingredients to banana mixture stirring to combine.  Stir in chocolate chips and pecans.  Bake at 350 degrees 18 – 20 minutes.  Yield: 15 muffins.  So good!

But then, the big surprise was an early birthday gift from my family since I won’t be here on my actual b-day…are you prepared for the blinding array of deliciousness pictured below?


Nut Butter Heaven

Note to self: When your family asks what you want for your birthday, maybe you shouldn’t tell all of them to get you the same thing.  Ha – I think they purchased  Naturally Nutty ‘s entire stock, and I could not be more grateful.  Love my fam!  I had never tried the Chocolate Butter Toffee Peanut Butter, and let me tell you it is heaven on a spoon…OK, OK, truth be told, heaven on my finger 🙂  You guys know I love my crunchy Barney Butter, but I think Naturally Nutty makes some the best flavored nut butters out there!

Questions of the day

How long do you think it will take me to finish all these jars…plus the 5 other nut butters already in my cabinet?  I think I’m up for the challenge 🙂

    Holy nut butters. That is a ton of nut butters! I don’t know how you control yourself Heather, I just go at the stuff with a spoon and can’t make myself stop.

    Your muffins sounds very yummy, who doesn’t love bananas and peanut butter?!?

    lol!! you got some awesome presents =D
    it usually takes me a month to use up a jar (i think?) so i’d say, 8 months!?!?

    YUM! Try a jar a week. 😉 Those Patagonia boots look comfy and warm! I love their products and they’re such an eco-minded company. So they’re basically perf.
    My favorite gift…hmm…prob my bright orange dutch oven!

    Your blog is making me want muffins now!! I’ll just have to settle on martha white blueberry…
    I don’t know how long that nut butter will last, but i think it would be safe to say it won’t go bad ;-p

    Hey Jacob, we did have a good Christmas. From your pictures on Facebook, looks like you did as well. I will definitely make those muffins again – maybe I can bring them to a race and you can try one 🙂

    I got a nice set of knives for Christmas! I feel like Heather now with nice kitchenware. I hope you had a Merry Christmas. I saw some microwavable boot socks at Bed, Bath & Beyond. I almost took a picture of them on my phone to show you.
